Apprenticeship is based on the European model of education blending hands-on experience with classroom hours. At the end of the two-year program the chefs will test out at the CSC (Certified Sous Chef) level – the second level of certiﬁcation through the American Culinary Federation. Additionally, SFC continues to host the students at our processing facility for a hands-on experience with receiving, handling, and shipping of seafood. This behind-the-scene learning experience provides the students a deeper understanding of the seafood they will continue to work with the rest of their careers.

A few Thursdays ago, Seattle Fish Co. and a number of restaurant-industry enthusiast congratulated the culinary scholarship recipients as they walked across the stage in the Hyatt Regency Hotel. In partnership with the National Restaurant Association Educational Foundation and the T. Kevin McNicholas Foundation, the Colorado Restaurant Association Education Foundation honored its 2014 scholarship award recipients at the 12th CRA Annual Scholarship Awards Luncheon. Each year, Seattle Fish Co. awards a student with an SFC ProStart Scholarship, and we were proud to present it this year to Taylor Kellenaers! Congrats, Taylor and we can’t wait to see your skills and try some of your culinary creations in the near future!
