Apprenticeship is based on the European model of education blending hands-on experience with classroom hours. At the end of the two-year program the chefs will test out at the CSC (Certified Sous Chef) level – the second level of certification through the American Culinary Federation. Additionally, SFC continues to host the students at our processing facility for a hands-on experience with receiving, handling, and shipping of seafood. This behind-the-scene learning experience provides the students a deeper understanding of the seafood they will continue to work with the rest of their careers.
