This past Monday, the Chef’s Collaborative touched down in Denver to host one of its largest Trashfish dinners to date — and it was a seafood event for the books! Seattle Fish Co. sponsored the seven-course Legendary Trashfish dinner, which was held at The Squeaky Bean and featured underutilized seafood species that Seattle Fish Co. procured from sources all over the world. Highly acclaimed local and national chefs, including Theo Adley of the Squeaky Bean; Kyle Mendenhall, chef of The Kitchen; Kelly Whitaker from Basta and Cart Driver; and Chris Thompson from The Nickel, shared the kitchen and prepared some of the best — and most undervalued — fish we’ve NEVER had.
