Derek Figueroa, Seattle Fish CEO & President, was featured this week on the Aquademia Podcast in an episode covering the topic of “Sustainable Seafood in the Restaurant Industry”. Derek also served as 2021 Chair of the National Fisheries Institute.

As Derek mentions, “Even through COVID challenges, labor shortages, and inflation, we have not seen restauranteurs make concessions around quality or sustainability. They continue to hold true to their values and principles.”
