William Wahl is chef and proprietor of restaurant Indulge French Bistro by William Wahl. He was born, raised and trained in France, initially in the family business, Casino du Lac in Bagnoles de L’Orne, in Normandy. Chef William finished his apprenticeship in Caen at The Relais Des Gourmands
, a two-star Michelin Hotel Restaurant, and in Ammerschwihr located along the wine road of Alsace. He moved to Paris to continue learning his trade. At age 19, William opened his first restaurant, Le Vrai Normand, in Vire, France, with his brother Michael, also a very talented chef with extensive experience.

Given an opportunity to go to the U.S. Virgin Islands in 1989, Chef William worked at Chez Jacques and Café Normandy. As executive chef, he orchestrated private functions for the governor and Danish consulate. Subsequently, William became the executive chef at The New York Yacht Club in Manhattan; Stone Pine Estate Resort in Carmel Valley (the only Relais and Chateaux Purple Shield award winner in the United States); and the Game Creek Club
and Vail Mountain Catering in Vail, Colorado, where he again served many prestigious clients. Continuing his career in Denver, he worked as executive chef for Kevin Taylor at three of his venues: Kevin Taylor’s at the Opera House in Denver and Rouge Restaurant
and Face Bar Restaurant, both in Central City.

With over two decades’ experience preparing exquisite cuisine in various locations around the world, Chef William now brings his expertise with global twists to his delectable dishes in the Denver Highlands.

I have worked in kitchens around the world but I still want to infuse a sense of locality into our ever-changing global menu. Sourcing our seafood selections through Seattle Fish Company has made finding top-quality local and sustainable options effortless as they are continually updating me on fresh products, what products are in stock, pricing and facts about different options. As a Denver transplant, this information is incredibly helpful and allows me to focus on my restaurant and menu.
