SALMON / TROUT

Sockeyes and cohos are running strong right now. Prices and supply should be good for the next couple of weeks, at least. We also have some very nice wild troll kings available this week.

Ask your rep about our new Scottish salmon program! We have recently transitioned most of our farm-raised whole salmon from Canadian fish to Scottish. They are available in whole fish or fillet form. These fish have a very good fat content and color and are competitively priced! Along with our whole Scottish fish, we also have the Loch Duart Scottish salmon, Clare Island organic Irish salmon, and New Zealand farm-raised kings!

SHELLFISH

Oyster availability is very limited right now, and prices have climbed. This is the result of high temperatures up and down the East and West coasts, as well as additional pressure being put on the market due to the oil spill in the Gulf. High temperatures have caused closures of oyster beds in British Columbia and Washington, including areas of Hood Canal. Don’t worry, though; we still have a nice selection to choose from, both East and West Coast.

Good availability on hard-shell clams and mussels this week. Please remember to ice your shellfish very well this time of year!

EAST COAST

Good availability of ground fish this week. Georges Bank will open later this week, and we should see availability open up even more. Haddock is a great bargain right now and should hold for a week or two. Along with haddock, we just brought in some nice skate wing, wild striped bass, market cod, monkfish, black bass, and dab fillets.

WEST COAST

Halibut prices are staying firm, with no relief to be seen in the near future. Dover sole, ocean perch, fresh Dungeness meat, grouper, Pacific cod, yellowtail, black cod, rockfish, and petrale sole are in house and available for the week.

Corvina and California white sea bass are limited this week.

GULF

Options are limited for the first part of the week, as another tropical storm is making its way west off the Florida coast and boats have tied up. Once boats get back out on the water, we should have better availability heading into the weekend, including American red snappers (large fish!) and some beautiful, well-priced silk snapper fillets! Meanwhile, we have swordfish, yellowfin tuna, yellowtail snappers, escolar, and mahi mahi in house. Mahi is still very difficult to source. The fish that are available are very pricey.

GREAT LAKES

Hot temperatures are keeping the fish in deeper, cooler waters. Until we see a nice string of cooler days, availability out of this area will be extremely tight. This affects walleye, whitefish, perch, buffalo, and carp.

HAWAII

Lots of great options from the Hawaiian auction over the weekend! Ono (wahoo), uku snapper (gray), opah, albacore, and bigeye tuna are in house. Along with these great offerings, we have some beautiful hiramasa (yellowtail) from southern Australia! This sashimi-grade fish is incredible and will rival any hamachi out there!
