Wild Alaskan Salmon

In recognition of the Copper River Run in Alaska opening on May 16, our featured product is wild Alaskan salmon.

Freshwater habitats in Alaska have remained relatively pristine, and salmon originating in Alaska do not face the same damming, deforestation and development challenges as those in California and the Pacific Northwest. The current abundance of Alaskan salmon and their habitat reflects the success of the state’s management practices.

The salmon returning to Alaskan streams and rearing in Alaskan waters are the basis for one of Alaska's most important industries and underpin a traditional subsistence lifestyle in rural portions of the state. From 2000 to 2004, the average harvest of salmon sold by commercial fishermen in Alaska was almost 157 million fish (about 742 million pounds).

Because of the magnitude of commercial fisheries for salmon, state biologists collect extensive information and statistics for management decisions. Alaska also has very important sport and subsistence fisheries for salmon. Many Alaskans depend heavily on subsistence-caught salmon for food and cultural purposes. Fishery management plans give top priority to the subsistence use of fish resources.

Five Pacific salmon species spawn and have directed fisheries in Alaska: sockeye or red salmon; pink salmon; chum or dog salmon; king or Chinook salmon; and silver salmon. The Alaska Department for Fish and Game is expecting an increase in commercial salmon catches in 2011 due to the projected increase in pink salmon harvests. The 2011 total commercial salmon catch (all species) is projected to be 203.4 million.

The flavor of Alaska Salmon depends upon fat content and the environment in which it matured. Alaska's icy, pure waters and the abundance of natural food give Alaska Salmon unparalleled flavor. The fat content of salmon depends not only on the genetic make-up of each species, but also on its spawning cycle. The longer and more vigorous the freshwater trip, the more fat the fish will carry as it leaves the ocean. This fish is an excellent seasonal item for any menu.
