U.S. seafood customers demand ‘new paradigm’ of distribution

The increasing sophistication of seafood customers is fuelling a growing demand for distributors to transfer expertise and knowledge to customers, not simply shifting seafood as a commodity, a U.S. distributor said.

Seattle Fish Co., a distributor based in Denver, Colo., that sells 6.5 million pounds (2,948.35 metric tons) of seafood per year, is reaping the benefits of educating chefs, wait staff and end consumers on the sourcing, seasonality and cost of different seafood, chief operating officer Derek Figueroa said.
